Cliff House Hotel opens in Ardmore, County Waterford.
The new Cliff House Hotel is a stylish hideaway offering a unique, modern
interpretation on the intimate sea-side hotel. Carved into the Irish coastline at
Ardmore fishing village, Cliff House is a chic boutique hotel, managed by
Adriaan Bartels, formerly the General Manager of Sheen Falls Lodge, County Kerry.
Encompassing 39 bedrooms, a restaurant and dining room, 2 reception rooms and
a nautical themed bar, The Cliff House hotel spans seven floors gradually edging
down to the shore. A palette of deep marine blue, fuchsia, aubergine and sea green
instantly evoke the surrounding coastline and countryside. Interestingly, the hotel
houses the largest private collection of antique Campaign furniture in Ireland.
Rooms at The Cliff House Hotel range from cliff veranda suites to terrace suites and
luxury doubles, all featuring Wi-Fi and flat screen TVs. Each bedroom offers its own
private terrace overlooking the sea. Bespoke rooms are styled with Campaign
antiques and oversized furniture upholstered in modern linens and tweeds. Beds
are back-lit with unique headboards designed by local artists using
indigenous Irish materials such as linen, glass and dried petals.
Etro luxury bath products sit easily atop the egg-shaped floor-standing baths; while
in the veranda suites, guests can shower quite literally under the stars as the
enclosed glass surround extends onto the balcony.
The House Restaurant, headed up by Dutch culinary star Martijn
Kajuiter, offers a seasonal gourmet menu – lobster caught that morning, crab from
the bay or locally reared meat served with home grown vegetables. An expansive
terrace which extends onto landscaped gardens features unbroken ocean
views and is ideal for all-day dining and entertainment.
The Well Spa features an outdoor Jacuzzi, sauna, steam room, fully-equipped gym
and three treatment rooms with expert therapists delivering signature treatments.
Voya organic seaweed products are available as are Ann Semonin facials and other
treatments.
For outdoor activities few will be able to resist the lure of the sea that can be
accessed directly from the hotel via a private pontoon, a first for an Irish hotel.
Walks on Ardmore Beach can be followed by the cliff walk or an exploration of the
historical Round Tower and St Declan’s Well which mark Ardmore village as the
oldest Christian settlement in Ireland. Organised water activities can be arranged
by the hotel including water-skiing, deep sea fishing, windsurfing, kayaking, scuba
diving and sailing. Golf enthusiasts can be assured tee-times in nearby award
winning courses such as Dungarvan Golf Club, Fota Island in Cork or The Old Head,
Kinsale.

Schilo Van Coevorden is appointed Executive Chef of Finca Cortesin, Spain.
Schilo Van Coevorden, formerly Executive Chef of the well known College Hotel,
Amsterdam, has now been appointed Executive Chef of Finca Cortesin, Stein Hotels
and Resorts’ stunning new development in Marbella, Spain, opening Autumn 2008.
Schilo will preside over Restaurant Schilo, a headline dining experience for Finca
Cortesin showcasing Asian-fusion gourmet food.
Schilo brings over 22 years of culinary and food and beverage experience to this
position. He started as Comis de Cuisine in classic Rotterdam restaurant
La Villette, then moved to Restaurant Old Dutch, where he worked until 1987, before
moving to Belgium to work with Roger Souverijns in his Scholteshof Restaurant (2
Michelin stars), he then went back to Rotterdam as Chef de Partie, Garde Manger
and Patissier at Parkheuvel Restaurant (1 Michelin star) and then to a 3 Michelin star
restaurant Im Schiffchen in Dusseldorf.
In 1992 Schilo moved to London joining Hyatt International as Head Chef in the Lowndes
hotel, a small boutique hotel, and in 1995 went to Dubai to open their first cutting
edge Restaurant Foccacia. In 1996 he came in contact with H.E. Sheikh
Mana bin Khalifa Al Maktoum who asked him to open The Sphinx Global Restaurant.
After travelling extensively through Asia, Schilo returned to Europe in 1999 to open
the brand new hotel Blakes in Amsterdam as Executive Chef / Food and Beverage.
In 2004 he joined Stein Hotels and Resorts at the opening of the renowned
The College Restaurant at The College Hotel in Amsterdam and was promoted in 2005 to
Executive Chef for Stein Hotels and Resorts as a whole.
